Making the most out of your Veggies

For breakfast, I either do spinach with tofu hash (potatoes, turmeric, a little coconut oil, maybe avocado), fruit or berries with yogurt, add green to my smoothie, or nuts to my oatmeal.
Lunch is usually salad, veg soup, or a sprouted sandwich. Sometimes it's a grain bowl with veggies too.
Dinners I always am looking for new variety. Usually on the weekends, I try to plan dinners ahead, but sometimes I get tired or forgetful - or even lazy. Sunday nights are sometimes leftovers, but we could make it fun and spice it up with Vegan Nachos or GF nachos (these are bell pepper "chips" smothered with beans, guac, olives, vegan cheese if I have it)... Mondays are usually a crockpot meal: bean soup or lentils or Indian dahl or bbq jackfruit... Tuesdays are almost always Taco Tuesday: tofu, beans, bell pepper, onion, cumin, corn tortillas... Wednesdays are usually a veg stir fry, Asian inspired sauce, fried rice with veggies. Thursdays are sometimes a pasta dish. Fridays I love making or ordering vegan pizza (veggie pizza, no cheese) or adding a vegan cheese if I have it. Saturdays could be veggie burgers or something on the grill. My Yankee mama taught us to always add salads to every meal (lunch and dinners I mean), and my Yankee husband happens to love the "Meat and threes" so now that we are Plant Based, we try to do a protein and 2-3 sides (veggie/salad/starch)
